Balsamic Glaze

Serves: 500ml

Ingredients

To buy:

570ml balsamic vinegar

570ml red wine

130g dark brown sugar

METHOD

BRING the vinegar and red wine to the boil in a heavy saucepan – lower the heat and simmer until reduced by half.

STIR in the sugar, allow it to melt and slowly increase the heat – boil vigorously until reduced by half again.

LEAVE to cool before transferring to a sterilized bottle.
