Beef Bolognese with Hidden Vegetables

We love a hearty bolognese but our knife skills are not the greatest which means even a simple recipe can take up time if it requires finely dicing a number of veggies!???!
This beef bolognese with hidden vegetables has to be one of my favourite recipes for feeding baby and the family.  By roasting the veggies in the oven, it literally ties a busy parent to the kitchen counter for less than 10 minutes leaving you plenty of precious time to catch up on all those other chores!  Just let the bubbling pan do the hard work!  Plus it is packed with hidden veggies for baby and toddlers to enjoy.  Even my husband loves it!

Difficulty: easy

Serves: 6

Ingredients

To buy:

1 carrot

1 stick of celery

1 large uncooked beetroot (washed)

500g mince beef

 

Store-cupboard essentials:

1 red onion chopped in half

1 clove garlic

1 tin chopped tomatoes

500ml boiling water

METHOD

PREHEAT your oven at 180.

PLACE your carrot, celery, onion and beetroot on a baking tray and drizzle with olive oil.

PLACE in the oven for approximately 45mins to 1 hour until all the vegetables are roasted.

HEAT in a large pan a little olive oil and once hot add the whole clove of garlic for a couple of minutes.

ADD the mince and once the meat is all brown, add the tin of tomatoes and water bring to the boil and then leave to simmer on a gentle heat for approximately 1 hour (around the time the vegetables are done).

PUT the vegetables in a bowl once ready and blitz them with a handheld blender.  Then add them to the saucepan with the mince meat.

REMOVE the whole clove of garlic.

REMOVE a portion for the baby and then season for the rest of the family with salt and pepper.
