
Our Cheats Chicken Cacciatore is a rustic hunter’s stew so simple to prepare and a ‘one pot meal’ the whole family can enjoy!
METHOD
PLACE in a large casserole pan the tinned tomatoes
USING the empty tomato tin measure out 3 tins of chicken stock and add to the pot.
ADD half a tube of tomato puree
PLACE on the heat and bring to the boil
WASH your veg and top and tail then place whole into the pan.
COVER with a lid and boil for 10 minutes.
ADD your chicken thighs and reduce heat to a simmer,
COOK for a further 1 hour with the lid off.
SEASON to taste
REMOVE the chicken to one side and blitz or mash the remaining vegetables.
RETURN the chicken to the blitzed sauce and serve on a bed of rice.
