Sugar free Coconut and Apricot Rice Pudding

We love this sugar free coconut and apricot rice pudding recipe. It’s super simple and just puts a smile on everyone’s faces. Creamy coconut rice pudding naturally sweetened with apricots. . You can also have a bit of fun by swapping the dried apricots with some cooked fruit like stewed plums or stir in a little jam or honey.

Ingredients

To buy:

50g pudding rice

200ml coconut milk

100ml water

1/2 vanilla pod (you can use vanilla extract, but I would avoid doing this if you’re planning to give to a baby, as you want to avoid giving them extra sugar)

50g organic unsweetened dried apricots, chopped into small pieces

zest of an orange

METHOD

BLITZ the pudding rice so that you have a consistency of half powder, half kernel. This just helps with the smaller mouths in my family, and I personally prefer the texture.

PLACE all the ingredients into a pan and place on a medium heat.

BRING the rice pudding to the boil, then place a lid on the pan and reduce the heat to a simmer.

LEAVE to cook, but occasionally stirring. This should take approximately 10-15 minutes.

SERVE

BABY: I usually blitz the cooked rice pudding even further so it resembles more of a puree
