Green Zucchini Baby Pasta

Green zucchini baby pasta has all the goodness of courgettes, tasty cheese and a nutritious egg.  This is a great way to introduce eggs for the first time to your baby and a lovely way to get your baby used to textured food.   This simple pasta recipe is a perfect baby food idea and great for the whole family to enjoy at the same time. It’s super-tasty whatever your age! This fantastic recipe was one our nonna and mum always use to make for us as children.

Cooking: 5-10 mins

Difficulty: easy

Serves: 1-2

Ingredients

To buy:

1 Courgette/Zucchini grated with a course hole grater

 

Store-cupboard essentials:

1 egg yolk

2 handfuls pastina (we like star shapes but you can use any tiny pasta shapes)

1 tablespoon grated parmesan

1 tablespoon extra-virgin olive oil

2 cups boiling water

METHOD

BRING  your water to the boil and add your pastina.

LOWER the heat and cook for 3 minutes.

ADD your grated courgette into the boiling water along with the pastina.

WHEN your pastina is almost cooked add your egg yolk, parmesan and olive oil.

REDUCE the broth to a simmer so it thickens and absorbs most of the water
