
This healthy family frittata is super quick using leftover roasted vegetables. It is great recipe for feeding the whole family.
METHOD
MASH with a fork your roasted vegetables in a non-stick frying pan.
ADD the two eggs and mix them so they get combined with the veggies.
SPRINKLE the top with some blitzed raw kale.
TURN on a medium heat and let the frittata cook.
WHEN crispy on the bottom flip over.
ADD seasoning for adults before serving
