
These healthy Rice Krispie balls are the perfect snack for any child. You can use either dates or prunes and they are great for on the go parents who need to give their little ones a healthy snack. Get the Kids involved and get them to help you roll them into balls.
METHOD
SOAK the dates/prunes with enough hot water to cover and leave for 5 mins.
DRAIN the dates reserving the water for later and place in a food processor along with the coconut oil, vanilla and pinch of salt.
BLITZ till a smooth sticky consistency. Loosen if necessary with a teaspoon of the reserved water.
COAT the puffed rice with the sticky sauce and roll into balls
