Lemon Ricotta Pancakes

To buy:

250g ricotta

zest of a lemon

Store-cupboard essentials:

120g flour (use ground almonds)

½ tsp baking powder

1½ tsp sugar

½ tsp vanilla extract

¼ tsp salt

180ml milk

2 eggs

 

 

 

METHOD

SEPERATE your eggs into two bowls

BEAT the egg whites with 2 tablespoons of sugar until soft peaks

MIX together the egg yolks and all the remaining ingredients

FOLD in the egg whites

FRY with a little butter or oil of your choice
