Mini Pizza Appetizers

Mini Pizza Appetizers are so quick and easy to prepare using ready-made puff pastry.  It is fantastic to serve at a party or a special celebration and can also be a great snack or treat for toddlers. Be creative and colourful with your toppings and get the whole family involved.

Ingredients

To buy:

1 sheet of ready rolled puff pastry

100g freshly grated mozzarella cheese

Store-cupboard essentials:

1 x 400g tin good-quality plum tomatoes

1 tablespoon olive oil

1 tablespoon dried oregano, plus extra to serve

1 teaspoon fine salt

1⁄2 teaspoon cayenne pepper (optional)

METHOD

PREHEAT the oven to 200C. In a food processor.

BLEND the tomatoes with the oil, oregano, salt and cayenne pepper and set aside.

CUT the puff pastry into 2 inch diameter circles and place onto a greaseproof baking tray.

BAKE for 2-4 mins until they begin to puff up.

REMOVE the baking tray from the oven and press down each circle in the middle.

PLACE ½ tsp of tomato sauce on top and sprinkle some mozzarella.

RETURN the mini pizzas to the oven and continue to bake for a further 4-8 mins until the pastry is crispy and golden on the bottom.
