Pear Honey and Almond Cake – Gluten Free

This delicious gluten free pear honey almond cake is very simple to make, is lovely and moist and will tackle those nasty sugar cravings. It’s sweetened with natural sugars and the addition of the super spice cinnamon (that is said to regulate blood sugar and fix all kinds of ailments), this is one super food concoction where you can ‘have your cake and eat it’ all yourself.

Ingredients

To buy:

½ teaspoon Almond Extract

3 small pears (approx 350g) grated with skins on with a large hole cheese grater

225g ground almonds

50g flaked almonds for topping

Store-cupboard essentials:

3 eggs

100ml Honey or Maple Syrup

50 ml Olive oil

1 teaspoon Cinnamon

1 tsp Baking Powder

½ teaspoon Bicarb of Soda

½ teaspoon fine salt

METHOD

PREHEAT the oven to160*C and grease and line a round 22cm tin.

SEPARATE the eggs into 2 bowls, beat the egg whites till stiff peaks and leave to one side.

ADD the maple syrup to the yolks, olive oil and grated pears and mix together.

ADD the rest of the dry ingredients and mix well.

FOLD in the beaten egg whites.

POUR into a greased and lined 9 inch spring tin and sprinkle with the flaked almonds

BAKE for 1 hour. The cake should have shrunk away from sides of tin.
