Roasted Parmesan Peas

Our crunchy Roasted Parmesan Peas are a great healthy toddler snack and super easy to prepare.  A bag of frozen peas are always great to have to hand when you run out of fresh vegetables. Green peas are a very good source of vitamin K, manganese, dietary fiber, vitamin B1, copper and vitamin C. The taste of frozen peas is very similar to fresh peas and there is very little nutrient loss in the freezing process. Keep in mind that peas are a choking risk until 3 years old or until your child has the ability to chew them.

Ingredients

To buy:

2 – 3 large handfuls of frozen peas

Store-cupboard essentials:

1 tbsp of olive oil

1 handful parmesan cheese

(experiment with spices and herbs)

METHOD

HEAT the oven to 180*C

COMBINE in a bowl the peas, oil and parmesan.

SPREAD the peas in a single layer on a baking tray.

PLACE the tray in the preheated oven for 20-30 minutes removing the tray every 5-10 mins to shake

ONCE the peas start to brown remove & set them aside to cool for about 10 minutes

TRANSFER  the peas carefully to a paper towel to soak up any excess oil and to complete the cooling process.
