

This walnut and parmesan speedy pasta sauce is a divine rich and creamy combination. This sauce works well on all pasta types and even gnocchi.
METHOD
PLACE the pasta in a pan of boiling salted water and cook until al dente.
MEANWHILE put the walnuts in a pestle and mortar and crush until ground OR blitz in a food processor.
ADD the cream, ground walnuts and parmesan to a pan and gently heat through.
SEASON with a good pinch of ground black pepper.
LIFT the cooked pasta from the boiling water with tongs or a pasta spoon and add to the creamy sauce.
ADD a spoon or two of the cooking water to loosen if needed.
MIX well, season to taste and serve.
