
This Tomato, Lemon and Rocket pasta sauce is so tasty and super speedy that the longest part of this recipe is waiting for your pasta to cook.
METHOD
PREPARE a pan of boiling water before you begin the sauce – its that speedy!
HEAT a generous glug of olive oil and add your garlic glove, whole.
ADD the cherry tomatoes and cook for 2-3 mins you just want to heat them through and soften a little bit.
ADD the zest of the lemon and juice and season with salt and pepper.
ONCE the pasta is cooked and still aldente add to the sauce and toss in the fresh rocket.
Season with parmiggiano and extra virgin olive oil and serve immediately.
